I’ve been having fun perfecting my Peanut Butter Banana bread recipe. This is amazing. Just the right amount of peanut butter and that little drizzle of honey makes it so yummy. I enjoy putting peanut butter on top of my banana bread so I don’t like to add too much peanut butter to the actual peanut butter recipe. Comment below if you try this recipe or how you adapted it. Its a great breakfast or quick snack option.
1 Cup Sugar or Sugar Substitute (I use Stevia)
1/2 Cup Butter
2 Eggs
2 Cup Flour
1/4 tsp Salt
1 tsp Baking Soda
2-3 RIPE Banana’s
1/3 Cup Peanut Butter
1/3 Cup Sour Cream (or Plain Greek Yogurt)
Drizzle Honey (1.5 TBLS or so)
1/4-1/3 Cup Mini Chocolate Chips *Optional*
Cream together soft butter & Sugar. Beat in eggs 1 at a time. Mix in dry ingredients (I usually mix the dry ingredients separately and then add to the mixture). Add banana’s, sour cream, and peanut butter. Once everything is well mixed add drizzle of honey to the mix mix this in by hand or very lightly with mixer (don’t over mix). Place mixture in 3 greased mini loaf pans or 1 greased large loaf pan. Add mini chocolate chips to the top of each load. Bake at 350 for about 45 minutes (for large loaf) or until done. Wait for 5 minutes or so until load is semi cooled then pull loaf from pan and cool on wire rack 1-2 hours.
