A couple of healthy recipes I’m enjoying

This Spring has been rough. Cold and wet. I’m trying to keep my sights on summer and getting some of this winter weight off. The key to weight loss is CLEAN EATING. Its true. I wish the key was exercise but it isn’t. Exercise and supplements can be helpful in shaping and assisting us in the weight loss but the key is what we put in our mouths. I’d love to share a couple of my tried and true recipes that have resurfaced in my diet this spring. Let me know if you try them and what you think? Enchilada Quinoa Crock pot meal

The rest of my family is not a fan so this meal actually will last me a week or more. Sometimes I freeze 1/2 of it (It makes A LOT) and will actually get a couple weeks of meals out of it. Also I choose to leave the cheese off. It just adds extra calories that I can’t necessarily taste without all of the other spices in this dish. There are so many variations to this dish on Pinterest or online so if your looking for something just a little different – look around OR play with the recipe. Banana Chocolate Chip Baked Oatmeal

1 1/2 cup Oatmeal (I use old fashioned oats)

1 tsp baking powder

1/2 tsp salt

1 tsp cinnamon

2 ripe banana’s

1 tsp vanilla extract

3 tbs stevia

1 egg

3/4 cup almond milk

1/4 cup dark chocolate chips

Mix banana’s well blend with stevia, vanilla extract and egg.. Add remaining ingredients but save chocolate chips for last. Put in sprayed 9 X 9 square pan add chocolate chips to the top. Bake 350 for about 25 minutes.
